Cucumber, Cream Cheese and Salmon Sushi Rolls


Looking for a healthy and delicious alternative to traditional sushi rolls? These rolls are not only incredibly delicious but also healthy and refreshing!

Ingredients:

To make these scrumptious Cucumber Sushi Rolls, you'll need the following ingredients:
  • 1-2 long cucumbers
  • Cream cheese
  • Smoked or fresh salmon
  • 125 grams of sushi rice
  • 25ml of sushi vinegar
  • 12 grams of sugar
  • 175 ml of water
  • 1 avocado

Cooking Instructions:

1. Prepare the Cucumber Slices:

Using a vegetable peeler, cut the long cucumbers into thin, long slices, approximately 5 discs per side.


2. Prepare the Sushi Rice:

In a bowl, mix the sushi rice with vinegar and sugar, ensuring it's well combined.

Fill the mixture with water, heat it, and then let it cool.

Once cooled, return the rice to the pot and add 175ml of water.

Simmer the rice on low heat for 15 minutes.

Remove the pot from the heat, place a linen cloth between the pot and the lid, and let it sit for 20 minutes.

Transfer the sushi rice to a large bowl, fluff it gently, and let it cool. It is now ready to use.


3. Assemble the Cucumber Sushi Rolls:

Lay out two strips of plastic wrap on a flat surface.

Arrange the cucumber slices on the plastic wrap, overlapping them as shown in the accompanying video.

Place a paper towel on top to absorb excess moisture.

Spread 1-2 tablespoons of cream cheese evenly over the cucumber slices.


Layer smoked salmon, avocado, and sushi rice on top of the cream cheese.

  • Feel free to add other fillings of your choice, depending on your preferences.


4. Roll and Chill:

Carefully roll the entire assembly into a tight roll, using the plastic wrap to guide you.

Wrap the roll tightly in the plastic wrap and refrigerate for 30-45 minutes. Chilling will make it easier to cut the roll into slices.
